Pumpkin Spiced Energy Balls

Today I decided to make some delicious energy balls. I've been obsessed with anything pumpkin spiced so I thought this would be a healthier way to indulge in my guilty pleasure. It's perfect for staying healthy during the holiday season when you want to feel like you're eating naughty food. These energy balls are perfect for an on-the-go snack as well as for a quick small breakfast. They take no longer than 5 minutes to be honest. So lets get started

Ingredient list:

Old Fashioned Oats - 1 cup
Canned Pumpkin Puree - 1/2 cup
Vega Protein and Green powder - 2 Scoops in Vanilla or whatever flavor you prefer
YS Eco Bee Farms Raw Honey - 3 Tablespoons (You can use a sweetener of your choice)
Nutiva Organic Virgin Coconut oil - 1 Tablespoon
Peanut Butter - 2 Tablespoons
Cinnamon - 1 Tablespoon
Pumpkin Pie Spice - 1 Tablespoon

Honestly loves, just dump all of the ingredients together and mix away! I did microwave the wet ingredients for 30 seconds so the peanut butter softens and it all mixes well. When everything is mixed thoroughly, roll the mixture into little balls like in the picture below. There you are! A very easy, high protein and carb rich snack for a quick breakfast or a cure for that 2:30 feeling.

If you really wanted to you could also make the mixture into a energy bar, just transfer the mixture into a shallow baking pan and use a spatula to smooth it out evenly. Let the mixture sit in the fridge for a few hours and then remove when they are firm. Cut them into a desirable size and take them with you to work or school for that delightful snack break.
