Make Your Own Oven Dried Tomatoes

Have you ever wanted sun dried tomatoes and just didn't know how? That's me! I just had tons of left over tomatoes that we had picked from our garden this summer so my husband and I thought it'd be an awesome idea to preserve some by oven drying them and then soaking them with some really good olive oil. I think it's delicious to add oven dried tomatoes into some Chicken Alfredo, it's absolutely delicious! I also enjoy them in some eggs in the morning because it adds some sweetness and that tomatoey flavor. Honestly, this is one of those things that's very easy to do because you really don't have to keep an eye out for them much; just plop them in the oven and check them every 3 hours or so.

Ingredient List:
Tomatoes - I used Roma Grape Tomatoes and Sweet 100 Cherry Tomatoes
Salt - It's optional but I salted it very lightly to help them dry a little better.
Extra Virgin Olive Oil - 1/3 Cup

I spread out the tomatoes on a sheet pan and before I did that I went ahead and sprayed the tray with olive oil so the sticky tomatoes won't grab onto the pan while they are in the oven. I was baking this at 180 degree Fahrenheit for a good 10 hours. You want to make sure that you go low and slow to dehydrate these bad boys without letting them burn. The total time it takes to get these tomatoes dehydrated properly depends entirely on your oven and the size and type of tomatoes you are using. The larger the tomatoes, the longer they need to cook. I kept my eyes on these and once they started to become a little meatier looking, you know they are done.

Once they are done cooking, take them out and toss them in some olive oil before putting them in a container for storage. In our case, we haven't gone out and gotten any mason jars yet so a good mug with a sealable lid worked for us. Store them in some olive oil to help keep them juicy and fresh.

That's it! Mix these into some alfredo sauce, throw them on a pizza with some basil and mozzarella cheese or chop them up to enrich some spaghetti. Whatever you do, I hope you love it!
